Smoked Beef Plate Ribs

  1. Preheat your smoker to 225°F.
  2. Trim the silver skin and any excess fat off the beef ribs.
  3. Season heavily with Uncle Dibbz Texas Steak Rub. No binder needed.
  4. Let the ribs sit at room temperature for 30–60 minutes so the rub can absorb into the meat.
  5. Place the ribs bone-side down directly on the smoker grates.
  6. Smoke at 225°F for 4 to 5 hours, until the internal temperature reaches 205°F and they’re probe tender.
  7. Remove from smoker and let rest for 20–30 minutes, loosely covered.
  8. Slice between the bones and serve or shred for sandwiches, chili, or tacos.
