Cowboy Beef Rib Chili

Ingredients
For the Smoked Beef Ribs:
- 2-3 beef plate ribs
- 2 tbsp olive oil
- 3 tbsp Uncle Dibbz Texas Steak Rub
For the Chili:
- 2 tbsp olive oil (or rendered fat from the ribs)
- 1 large onion, diced
- 2 bell peppers (1 red, 1 green), diced
- 1-2 jalapeños, seeded and minced (optional for heat)
- 3-4 tbsp Uncle Dibbz Big Chili Style seasoning (adjust to taste)
- 1 can (14 oz) fire-roasted diced tomatoes
- 1 can (6 oz) tomato paste
- 1 cup beef broth (or more for desired consistency)
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) black beans, drained and rinsed
- 1 tbsp Worcestershire sauce
- 1 tbsp apple cider vinegar
- 1 tbsp Uncle Dibbz Texas Steak Rub (added after beans)
- Salt and pepper to taste
Garnishes (Optional):
- One rib bone per serving (cleaned and saved from smoked ribs)
- Sour cream
- Shredded cheddar cheese
- Chopped green onions
- Fresh cilantro
- Sliced jalapeños
Instructions
1. Smoke the Beef Ribs:
- Preheat your Traeger Ironwood XL to 225°F.
- Coat the beef plate ribs with olive oil, then generously season with Uncle Dibbz Texas Steak Rub.
- Smoke the ribs directly on the grill grates for 4-5 hours, or until they reach an internal temperature of 205°F and are tender.
- Let the ribs rest for 20-30 minutes, then shred the meat, reserving the bones for garnish and any juices for the chili.
2. Prepare the Chili Base:
- Heat olive oil in a large Dutch oven over medium heat.
- Sauté the onion, bell peppers, and jalapeños until softened, about 5-7 minutes.
- Stir in Uncle Dibbz Big Chili Style seasoning and cook for 1-2 minutes to toast the spices.
3. Build the Chili:
- Add the tomato paste and stir until fully incorporated.
- Pour in the fire-roasted diced tomatoes, beef broth, Worcestershire sauce, and apple cider vinegar. Stir well to combine.
- Add the shredded beef rib meat and any reserved juices to the pot.
4. Add Beans and Season:
- Stir in the kidney beans and black beans, mixing thoroughly.
- Add 1 tbsp of Uncle Dibbz Texas Steak Rub to the chili, stirring well to incorporate.
- Simmer the chili uncovered or partially covered for 15 minutes to let the flavors meld.
5. Serve with Style:
- Ladle the chili into serving bowls.
- Garnish each bowl with a beef rib bone for a dramatic presentation.
- Add sour cream, shredded cheddar cheese, chopped green onions, cilantro, or sliced jalapeños to taste.
