Smoked Beef Plate Ribs

Ingredients
- 2 to 3 beef plate ribs
- 3 tablespoons, or to taste, Uncle Dibbz Texas Steak Rub
Instructions
- Preheat your Traeger or pellet smoker to 275°F.
- Trim any silver skin and excess hard fat from the beef ribs.
- Season the ribs heavily on all sides with Uncle Dibbz Texas Steak Rub. No binder is needed.
- Let the ribs sit at room temperature for 30 to 60 minutes so the seasoning can settle into the meat.
- Place the ribs bone side down directly on the smoker grates.
- Smoke at 275°F for about 3 hours, or until the bark starts to set.
- Wrap the ribs tightly in butcher paper or foil, then return them to the smoker.
- Continue cooking until the internal temperature reaches around 203°F to 205°F and the ribs are probe tender. Total cook time should be about 6 to 7 hours.
- Remove the ribs from the smoker and let them rest, loosely covered, for 20 to 30 minutes.
- Slice between the bones and serve, or shred the meat for sandwiches, chili, tacos, or loaded potatoes.
