- Preheat your smoker to 225°F.
- Trim the silver skin and any excess fat off the beef ribs.
- Season heavily with Uncle Dibbz Texas Steak Rub. No binder needed.
- Let the ribs sit at room temperature for 30–60 minutes so the rub can absorb into the meat.
- Place the ribs bone-side down directly on the smoker grates.
- Smoke at 225°F for 4 to 5 hours, until the internal temperature reaches 205°F and they’re probe tender.
- Remove from smoker and let rest for 20–30 minutes, loosely covered.
- Slice between the bones and serve or shred for sandwiches, chili, or tacos.
