Magic City Lemon Pepper Wings
These Magic City Lemon Pepper Wings are crispy, buttery, glossy, and built for that Atlanta style finish. For this version, the wings are seasoned only with Uncle Dibbz Atlanta Lemon Pepper Mild, then tossed in a rich butter sauce made with Uncle Dibbz Atlanta Lemon Pepper Hot.

Ingredients
For the Wings
- 2 to 3 pounds party wings
- 1 1/2 tablespoons Uncle Dibbz Atlanta Lemon Pepper Mild
- 1 tablespoon baking powder
- 2 tablespoons cornstarch
- Neutral oil, for frying
For the Sauce
- 1 stick unsalted butter
- 1 tablespoon olive oil
- 1 tablespoon fresh lemon juice
- 1 tablespoon lemon zest
- 1 to 1 1/2 tablespoons Uncle Dibbz Atlanta Lemon Pepper Hot
- 1 teaspoon honey
For Finishing
- Extra lemon zest
- Light sprinkle of Uncle Dibbz Atlanta Lemon Pepper Hot
- Lemon slices, optional
Instructions
- Prep the wings: Pat the wings dry very well with paper towels. The drier they are, the crispier they will fry. If you have time, let them sit uncovered in the fridge for 1 hour.
- Season the wings: Add the wings to a large bowl. Season with the Atlanta Lemon Pepper Mild, baking powder, and cornstarch. Toss until every wing is evenly coated.
- Fry the wings: Heat oil to 350°F. Fry the wings in batches for 8 to 10 minutes until golden and cooked through. Remove and let them rest for 2 to 3 minutes.
- Double fry for extra crispness: Raise the oil temperature to 375°F. Fry the wings again for 1 to 2 minutes to tighten the skin and give them that extra crisp finish.
- Make the sauce: In a skillet over low heat, melt the butter with the olive oil. Stir in the lemon juice, lemon zest, Atlanta Lemon Pepper Hot, and honey. Mix until smooth and glossy.
- Toss the wings: Add the hot fried wings to a large bowl. Pour the sauce over them and toss until evenly coated.
- Finish and serve: Top with extra lemon zest and a light sprinkle of Atlanta Lemon Pepper Hot. Serve hot.
