Walking Nachos

Ingredients:

  • 1 lb ground beef
  • Uncle Dibbz Texas Steak Rub, to taste
  • Optional: Uncle Dibbz Big Chili Style Seasoning, to taste if you want it spicy
  • 1/2 cup cheddar or Monterey Jack cheese, cubed
  • 1/2 cup onion, diced
  • 1 lb Velveeta cheese, cubed
  • 1 can 10 oz Rotel Diced Tomatoes & Green Chilies, undrained
  • 1 to 2 jalapeños, diced, adjust to taste
  • 1/4 cup cilantro, chopped, plus more for garnish
  • 1/2 cup milk
  • Individual bags of Doritos, Doritos Cool Ranch, and Fritos
  • Optional toppings: jalapeños, extra cilantro, sour cream

Instructions:

  1. Brown the Beef: In a large Dutch oven, cook the ground beef over medium heat until no longer pink. Season the beef with Uncle Dibbz Texas Steak Rub for a bold, savory base flavor.
  2. Add Heat If Desired: If you want the queso beef mixture to have more spice, add Uncle Dibbz Big Chili Style Seasoning to taste. The Texas Steak Rub should stay the main seasoning, while Big Chili Style brings the extra kick.
  3. Add Cheese and Veggies: Push the cooked beef to one side of the Dutch oven. On the other side, add the cubed cheddar or Monterey Jack cheese, diced onion, cubed Velveeta cheese, Rotel, diced jalapeños, and chopped cilantro.
  4. Add Milk: Pour 1/2 cup of milk over the cheese and vegetable mixture. Do not stir yet.
  5. Melt and Combine: Cover the Dutch oven and let the cheese melt over low heat for about 5 to 10 minutes. Once melted, stir everything together until the queso, beef, cheese, and vegetables are fully combined.
  6. Simmer: Reduce the heat to low and simmer the mixture covered, stirring occasionally, until everything is hot, smooth, and well blended.
  7. Assemble the Walking Nachos: Carefully open the individual chip bags. Scoop the hot queso and beef mixture directly into each bag.
  8. Garnish and Serve: Top with extra jalapeños, cilantro, or a dollop of sour cream. Serve immediately so everyone can enjoy their own bag of loaded walking nachos.
