1 can (10 oz) Rotel Diced Tomatoes & Green Chilies, undrained
1-2 jalapeños, diced (adjust to taste)
1/4 cup cilantro, chopped, plus more for garnish
1/2 cup milk
Individual bags of Doritos, Doritos Cool Ranch, and Fritos
Optional toppings: jalapeños, more cilantro, sour cream
Instructions:
Brown the Beef: In a large Dutch oven, cook the ground beef over medium heat until no longer pink. Season with Uncle Dibbz Big Chili Style Seasoning to incorporate the flavors.
Add Cheese and Veggies: Push the cooked beef to one side of the Dutch oven. On the other side, add the cubed cheddar or Monterey Jack cheese, diced onion, cubed Velveeta cheese, Rotel, diced jalapeños, and chopped cilantro.
Add Milk: Pour 1/2 cup of milk over the cheese and vegetable mixture. Do not stir.
Melt and Combine: Cover the Dutch oven. Allow the cheese to melt over low heat, which should take about 5-10 minutes. Once melted, stir everything together to fully combine the queso dip with the beef.
Simmer: Once mixed, reduce the heat to low and simmer the mixture covered, stirring occasionally, until everything is hot and flavors are well blended.
Assemble the Walking Nachos: Carefully open the individual chip bags. Scoop the hot queso and beef mixture directly into each bag.
Garnish and Serve: Add optional garnishes like extra jalapeños, cilantro, or a dollop of sour cream on top of each serving. Serve immediately for guests to enjoy their customized walking nachos.
