- 1/4 cup finely diced onion
- 1 egg, lightly beaten
- 3/4 cup buttermilk
- Vegetable oil

Prep the Oil: Heat vegetable oil in a deep-fryer or large, deep skillet to 365°F (185°C).

Combine Dry Ingredients: In a large bowl, whisk together cornmeal, flour, and baking powder.

Add Flavor: Stir in the diced onion to the dry mix.

Season: Sprinkle in Uncle Dibbz Straight Drop Rub to taste, and mix well.

Wet Mix: In a separate bowl, combine the lightly beaten egg and buttermilk. Stir this into the dry ingredients until just combined. Don't overmix; a few lumps are okay.

Test Oil: Drop a small amount of batter into the hot oil. If it sizzles and floats, the oil is ready.

Shape and Fry: Using a small ice cream scoop or two spoons, drop tablespoon-sized balls of the batter into the hot oil. Fry until golden brown, about 2-4 minutes, turning as needed.

Drain: Remove the hushpuppies with a slotted spoon and drain on paper towels.
