Stufffed Chicken Breast
For the Chicken Breasts:
2 large chicken breasts boneless, skinless
- 1/2 cup of Uncle Dibbz Durtty Bird Rub
- 3 Tbsp olive oil
For the Filling:
- 2 garlic cloves minced
- 1 1/2 cups baby spinach leaves, chopped
- 1/2 cup of red onion, diced
- 1/2 cup of red bell pepper. diced
- 1 cup mozzarella cheese
Preheat oven to 400˚F. In a mixing bowl, add mozzarella, onion, red bell pepper chopped spinach, and olive oil until combined.
Lay chicken on a flat surface and cut slit 3/4 of the way through without cutting all the way through. Drizzle 1/2 of olive oil over chicken and season the inside and the outside of the breast with Uncle Dibbz Durtty Bird Rub.
Stuff each chicken breast with 1/2 of the filling and seal horizontally with two toothpicks.
Heat the remaining olive oil in a cast iron over medium heat. Add chicken and sear for 4 minutes per side until golden brown on each side.
Flip a second time and immediately transfer skillet to preheated oven. Bake at 400˚F for 10-15 minutes until thermometer inserted into the thickest part of the chicken registers at 165˚F. Rest chicken 5 minutes before slicing. Enjoy!
