Straight Drop Elote
- 4 corn on the cob shucked
- 1/3 cup butter
- 1/3 cup mayonnaise
- 3 cloves of garlic crushed
- Zest of one lime
- 1 tablespoon of Uncle Dibbz Straight Drop Rub
- 1/4 cup chopped cilantro
- 1/2 cup shredded Parmesan cheese
- Lime wedges for garnish
In a bowl, mix together the Straight Drop dressing ingredients. Combine 1/3 cup butter, 1/3 cup mayonnaise, 3 minced garlic cloves, lime zest from 1 lime, 1 tablespoon ofUncle Dibbz Straight Drop Rub, and 1/8 cup chopped cilantro.
Grill corn without the husks on a grill, over high heat. Turn regularly for about 10 minutes until they begin to char. If using an oven, bake at 375ºF for 10 minutes.
Take the corn off the grill (or out of oven) and brush with the Straight Drop dressing all over.
Sprinkle 1/2 cup Parmesan cheese, lime juice, Uncle Dibbz Straight Drop Rub, and your remaining cilantro over the top, and enjoy!
