Sticky BBQ Chicken
Why You’ll Love This Recipe
This is the kind of recipe that looks like you worked harder than you did. The Memphis Bussin BBQ Rub helps give the chicken that deep caramelized color and cookout flavor before the sauce even hits the pan. Then the BBQ sauce, broth, vinegar, and honey bring everything together into a sticky glaze.
Prep Time: 10 minutes
Cook Time: 40 minutes
Total Time: 50 minutes
Servings: 4
Ingredients
- 4 bone in, skin on chicken thighs
- 1 tablespoon olive oil
- 2 tablespoons Uncle Dibbz Memphis Bussin BBQ Rub
- 1/2 cup BBQ sauce
- 3/4 cup chicken broth
- 1 tablespoon apple cider vinegar
- 1 to 2 tablespoons honey, for finishing
Optional Garnish
- Sliced green onions
- Crispy fried onions
- Pickled jalapeños
- Thin sliced red chili peppers
Instructions
- Season the chicken. Pat the chicken thighs dry, then add them to a bowl with olive oil and Memphis Bussin BBQ Rub. Massage the seasoning into the chicken until every piece is well coated.
- Start in a cold pan. Place the chicken skin side down in a cold skillet. Turn the heat to medium and let the chicken cook for 8 to 10 minutes, or until the skin gets dark, caramelized, and crisp around the edges.
- Flip the chicken. Turn the chicken over so the skin side is facing up. Keep the chicken in the pan.
- Build the sauce. Add BBQ sauce, chicken broth, and apple cider vinegar around the chicken. Stir the sauce together in the pan.
- Cover and simmer. Cover the skillet and reduce the heat to medium low. Let the chicken simmer for 25 to 30 minutes, or until the chicken is cooked through and tender.
- Make it sticky. Remove the lid and let the sauce reduce for 5 to 10 minutes, spooning the glaze over the chicken as it thickens.
- Finish and serve. Drizzle the chicken with honey, add your garnish, and serve hot with potato salad, baked beans, corn, or rolls.
Recipe Notes
- If the sauce gets too thick before the chicken is done, add a splash of chicken broth.
- Chicken thighs are best for this recipe because they stay juicy and give you that crispy, caramelized skin.
- You can use drumsticks, but they may need 5 to 10 extra minutes and should be turned as they cook.
- For best results, cook chicken to at least 165°F. For extra tender thighs, let them go closer to 175°F to 185°F.
