Steak & Shrimp Grilled Skewers

Surf and turf meets Southern flavor with these juicy steak and shrimp skewers, seasoned up with Uncle Dibbz Texas Steak Rub. Whether you’re grilling outside, searing in cast iron, or roasting in the oven — Unc's got you covered.
Ingredients:
- 1 lb ribeye or sirloin steak, cut into 1.5-inch cubes
- 1 lb large shrimp, peeled and deveined
- 1 large red bell pepper, cut into 1.5-inch pieces
- 1 large green bell pepper, cut into 1.5-inch pieces
- 1 tbsp Uncle Dibbz Texas Steak Rub
- 1 tbsp olive oil
- Optional: wooden skewers soaked in water for 30 minutes
Instructions:
Step 1: Prep the Steak
In a bowl, toss steak cubes with ½ tbsp of Texas Steak Rub and a drizzle of olive oil. Let it sit for 10–15 minutes while you prep the rest.
Step 2: Season the Shrimp
Toss shrimp with the remaining ½ tbsp of rub and a splash of olive oil until coated evenly.
Step 3: Prep the Veggies
Cut bell peppers into chunks roughly the same size as the steak for even cooking and threading.
Step 4: Assemble the Skewers
Alternate steak, bell peppers, and shrimp on skewers. Don’t overcrowd — leave a little space for even cooking.
Cooking Options:
Option 1: Grill
- Preheat grill to medium-high and oil the grates.
- Grill skewers for 3–4 minutes per side, turning once, until shrimp is opaque and steak is cooked to your liking.
- Let rest 2–3 minutes before serving.
Option 2: Cast Iron Skillet
- Heat skillet over medium-high until hot.
- Lightly oil the pan and sear skewers 3–4 minutes per side. Press gently to get a good crust on the steak and shrimp.
- Once cooked, rest for a couple of minutes before serving.
Option 3: Oven Roasted
- Preheat oven to 425°F (220°C). Line a baking sheet with foil or parchment.
- Place skewers on the sheet and roast for 12–15 minutes, flipping once halfway through.
- Broil for 1–2 minutes at the end for a charred finish (optional).
Serving Ideas:
- Serve over seasoned rice, street corn, or a simple side salad.
- Top with garlic butter or chimichurri for extra flavor.
