Roasted Tomato Basil Soup
• 3 garlic head
• 3 pints tomatoes
• 3 shallot
• 1 basil bunch
• 2-3 cayenne or jalapeño peppers
• Uncle Dibbz BeBe's Salt Free
• olive oil
• 1.5 cups coconut milk
• 2 cups veggie broth
- Add all of the ingredients, except coconut milk and veggie broth, to a pot. Season with Uncle Dibbz BeBe's Salt Free to taste and roast for 30 mins at 480°F.
- Remove pot from oven and discard of garlic peel and any stems from the peppers. Add all liquids and blend until smooth.
- Garnish with more basil. Enjoy!
