Don Julio Garlic Wings
These Don Julio Garlic Wings take crispy fried chicken wings and toss them in a buttery garlic glaze made with Don Julio Reposado tequila. Inspired by the Popeyes x Don Julio collaboration, this homemade version brings the tequila flavor front and center with a rich Reposado Gold Sauce.
Servings: 4 | Prep Time: 15 minutes (plus marinating time) | Cook Time: 15-20 minutes
Ingredients
For the Marinade:
- 2 lbs chicken wings (flats and drumettes)
- ¼ cup Don Julio Reposado Tequila
- 2 tbsp lime juice (freshly squeezed)
- 1 tbsp olive oil
- 1 ½ tbsp Uncle Dibbz Durrty Bird Rub
For the Dredge:
- 2 cups all-purpose flour
- ¼ cup cornstarch
- 1 tbsp Uncle Dibbz Delta Dust
- 1 tbsp Uncle Dibbz King Creole Blend
- 1 tsp baking powder
For the Reposado Gold Sauce:
- 4 tbsp unsalted butter
- 3 cloves garlic, minced
- ¼ cup Don Julio Reposado Tequila
- ¼ cup heavy cream
- 2 tbsp honey
- 1 tbsp lime juice
- 1 tbsp cornstarch mixed with 2 tbsp cold water
For Frying:
- 3-4 cups peanut oil or vegetable oil
Instructions
- Marinate the Wings: In a large bowl, combine the Don Julio Reposado, lime juice, olive oil, and Uncle Dibbz Durrty Bird Rub. Add the chicken wings and toss until evenly coated. Cover and refrigerate for at least 2 hours or overnight for deeper flavor.
- Prepare the Dredge: In a large bowl, combine the flour, cornstarch, Uncle Dibbz Delta Dust, Uncle Dibbz King Creole Blend, and baking powder. Remove the wings from the marinade and allow the excess liquid to drip off. Coat each wing thoroughly in the seasoned flour mixture. Place the dredged wings on a wire rack and rest for 10 minutes while the oil heats.
- Fry the Wings: Heat the oil in a deep pot or cast iron skillet to 350°F (175°C). Working in batches, fry the wings for 7-8 minutes or until golden brown, crispy, and fully cooked. Avoid overcrowding the pot. Transfer the fried wings to a wire rack to drain.
- Make the Reposado Gold Sauce: Melt the butter in a saucepan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant. Pour in the Don Julio Reposado and lime juice and simmer for 1-2 minutes. Stir in the heavy cream and honey until smooth. Combine the cornstarch and cold water in a small bowl to make a slurry. Slowly whisk the slurry into the sauce and simmer for about 2 minutes, or until the sauce thickens into a rich, glossy golden glaze.
- Toss & Serve: Remove the Reposado Gold Sauce from the heat and allow it to cool for 1-2 minutes. Add the hot fried wings and toss until every wing is coated in the garlic tequila glaze. Serve immediately.
