These crispy Pork Chop Nuggets are juicy on the inside and golden on the outside. Think of them as a Southern-style nugget made from pork chops instead of chicken. The buttermilk marinade tenderizes the meat while Uncle Dibbz Durtty Bird Rub brings bold flavor to every bite.
Ingredients
- 2 lbs pork chops, boneless and trimmed
- 1 cup buttermilk
- 3/4 cup Uncle Dibbz Durtty Bird Rub, divided
- Hot sauce, to taste
- 2 cups all purpose flour
- 1/2 cup cornstarch
- Peanut oil, for frying
- Fresh parsley, chopped (optional garnish)

Marinate the Pork
In a large mixing bowl combine the buttermilk, 1/2 cup Durtty Bird Rub, and hot sauce. Cut pork chops into 1.5 inch nugget pieces and coat well in the marinade. Cover and refrigerate for at least 30 minutes or overnight for deeper flavor.

Prepare the Breading
In another bowl mix together flour, cornstarch, and 1 tablespoon Durtty Bird Rub.

Coat the Pork
Remove pork pieces from marinade and allow excess liquid to drip off. Dredge each piece in the flour mixture until fully coated.

Fry the Nuggets
Heat about 2 inches of peanut oil to 300 to 325°F. Fry pork nuggets in batches for 6 to 8 minutes, flipping every 45 seconds. Cook until golden brown and the internal temperature reaches 145°F.

Transfer nuggets to paper towels to drain. Garnish with chopped parsley if desired. Serve hot with your favorite dipping sauces.
