Popeyes Fried Chicken (Copycat Recipe)

Ingredients

  • Chicken legs, thighs, and wings (2 of each)
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 2 tablespoons Uncle Dibbz Durtty Bird Rub (or adjust to taste)
  • Egg whites from 2 eggs
  • 1/2 cup water
  • Peanut oil for frying

Instructions

  1. Prep Chicken: Trim chicken legs, thighs, and wings into serving pieces if not already cut.
  2. Mix Dry Coating: In a large bowl, combine flour, baking powder, and Durtty Bird Rub.
  3. First Coat: Dredge each chicken piece in the dry mixture until well coated.
  4. Make Wet Mixture: In another bowl, whisk together egg whites and water.
  5. Second Coat: Dip chicken into the wet mixture, then return to the dry mixture for a second coat.
  6. Fry: Heat peanut oil in a deep pan or fryer to 350°F. Add chicken carefully. Keep oil temp between 300–325°F. Fry until golden brown and internal temperature reaches 165°F—about 12–15 minutes for wings and 15–20 minutes for legs/thighs.
  7. Drain: Transfer chicken to paper towels to remove excess oil.
  8. Serve: Enjoy hot and crispy fried chicken. That’s good shawty!
