Ingredients
- Chicken legs, thighs, and wings (2 of each)
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 2 tablespoons Uncle Dibbz Durtty Bird Rub (or adjust to taste)
- Egg whites from 2 eggs
- 1/2 cup water
- Peanut oil for frying
Instructions
- Prep Chicken: Trim chicken legs, thighs, and wings into serving pieces if not already cut.
- Mix Dry Coating: In a large bowl, combine flour, baking powder, and Durtty Bird Rub.
- First Coat: Dredge each chicken piece in the dry mixture until well coated.
- Make Wet Mixture: In another bowl, whisk together egg whites and water.
- Second Coat: Dip chicken into the wet mixture, then return to the dry mixture for a second coat.
- Fry: Heat peanut oil in a deep pan or fryer to 350°F. Add chicken carefully. Keep oil temp between 300–325°F. Fry until golden brown and internal temperature reaches 165°F—about 12–15 minutes for wings and 15–20 minutes for legs/thighs.
- Drain: Transfer chicken to paper towels to remove excess oil.
