Philly Cheesesteak Sliders

Ingredients

For the Sliders:

  • 1 lb ribeye steak, thinly sliced
  • 1 small onion, thinly sliced
  • 1/2 green bell pepper, thinly sliced
  • 1 tbsp olive oil (for veggies)
  • 1 tbsp Uncle Dibbz Straight Drop Rub (for onions & peppers)
  • 1 tbsp olive oil (for steak)
  • 1 tbsp Uncle Dibbz Texas Steak Rub (for steak)
  • 5 slices white American or provolone cheese, torn into pieces (for meat mixture)
  • 5 slices white American or provolone cheese, whole (for buns)
  • 12 King’s Hawaiian slider buns

For the Mayo Mixture:

  • 2 tbsp mayo
  • 1 tbsp Dijon mustard

For the Garlic Butter:

  • 2 tbsp olive oil (instead of butter)
  • 1 tsp garlic paste

Instructions

1. Prep the Ingredients:

Thinly slice the ribeye, onion, and green bell pepper. Mix the mayo and Dijon mustard in a small bowl and set aside. Mix olive oil and garlic paste in a small bowl to make the garlic oil.

2. Cook the Onions & Peppers:

Heat a griddle over medium heat. Drizzle 1 tbsp olive oil, then add onions and green peppers. Season with Uncle Dibbz Straight Drop Rub, tossing to coat. Sauté until softened and slightly caramelized (about 8-10 minutes). Move to the cool side of the griddle or remove from heat.

3. Cook the Ribeye:

Increase the heat to high. Drizzle 1 tbsp olive oil, then add thinly sliced ribeye in an even layer. Season with Uncle Dibbz Texas Steak Rub and let it sear for 2-3 minutes, flipping occasionally.

4. Melt the Cheese Into the Steak:

Take two slices of cheese, rip into pieces, and mix into the steak. Let the cheese melt into the meat, then fold in the onions and peppers. Move everything to the cool side of the griddle while you prep the buns.

5. Toasting & Assembling the Sliders:

Lower the griddle heat to low. Place the bottom slider buns on the griddle. Spread the mayo-mustard mix evenly over the buns. Lay down five whole slices of cheese on top of the buns. Spoon the steak and veggie mixture evenly over the cheese. Place the top slider buns over everything.

6. Steaming & Finishing:

Brush the tops of the buns with garlic oil. Cover the sliders with a heat-proof mixing bowl to trap steam, melting the cheese and warming the buns. Let cook for 2-3 minutes, then remove from heat.

7. Serve & Enjoy:

Slice into individual sliders and serve hot.
