Ox-Tail Philly Cheesesteak

 

@uncledibbz Oxtail PHILLY Cheesesteak 🥖 Get the recipe below ⬇️ or at uncledibbz.com [Link in Bio] ⬆️ Ingredients * 1 1/2 LB Ox-Tail * 1/2 Red Onion, sliced * 1-2 tablespoons of canola oil * Uncle Dibbz Texas Steak Rub, [link in bio] * Hoagie Rolls * 5 slices of white American Cheese Optional * 1 Habanero pepper, sliced * 1 jalapeno, chopped * Mayonnaise, to taste Instructions 1. Place the ox-tail into the freezer for about 3 hours to firm up to make it easier for you to slice thin. 2. Slice the onion into a thin strips. If you are adding any additions, chop those up as well (jalapeño and Habanero pepper). 3. Once the ox-tail has firmed up, take it out of the freezer and using a mandolin, slice it as thin as you can, until you can close to the bone. If your not using a mandolin, use a very sharp knife. 4. Heat up a long cast iron pan or skillet (12 inches) or stainless steel pan over medium heat. Then add the oil. Add the onions, jalapeno and Habanero peppers, cook until the onions are softened. Once veggies are cooked, push them off to one side of the pan, then push that area of the pan off the heat, or just remove from and set to the side. 5. Next add the ox-tail with a little more oil. Using a large metal spatula,  spread the ox-tail out in a thin layer and give it a minute or two to brown on that first side. Season to taste with Uncle Dibbz Texas Steak Rub.  When you see browning develop, flip and try to brown the other side quickly. Next break 1 slice of cheese in to tiny bits and add the meat. Then start to cook and chop up the meat in the pan. Once the meat is browned, you can mix in the onions or any other ingredients your add. 7.   6. Once the onion and the meat and anything else you are adding has come together for a minute or so, start to form the mixture in the pan in a narrow mound the shape of the roll you’re using. Take 4 slices of the cheese and lay  it right on top of the meat. Then take a hoagie that you lightly toasted whole, then sliced but not cut all the way through. Then add mayonnaise on the inside of the bread, then lay on top of the bed of meat to allow the bread to steam and the cheese to melt.
  7. At this point, slide a long spatula under the whole mix, release the meat from the pan, and in one quick motion, flip the sandwich with the spatula to reveal the perfect cheese steak. That's good Shawty!
