Oven Fried Pork Chops

Old school shake and bake style pork chops with a crispy oven fried crust and no pot of grease. These bone in pork chops get seasoned in a buttermilk marinade with Uncle Dibbz Durtty Bird Rub, then coated in a crispy Straight Drop seasoned breadcrumb crust.

Best Pork Chops To Use

Use bone in pork chops if you want the best look on camera. The best thickness is 1/2 inch to 3/4 inch thick. Thicker pork chops can work, but they may need extra time in the oven.

  • 4 bone in pork chops
  • 1 cup buttermilk
  • 1 tablespoon hot sauce
  • 1 1/2 tablespoons Uncle Dibbz Durtty Bird Rub
  • 1 tablespoon olive oil or melted butter
  • Cooking spray

For The Dry Shake Mix

Instructions

1. Season The Pork Chops

Pat the pork chops dry with paper towels. Add them to a bowl with buttermilk, hot sauce, and Uncle Dibbz Durtty Bird Rub. Mix until the pork chops are fully coated. Let them sit for 20 to 30 minutes.

2. Make The Dry Coating

In a large zip top bag, add panko breadcrumbs, plain breadcrumbs, flour, cornstarch, and Uncle Dibbz Straight Drop Rub. Seal the bag and shake until everything is mixed together.

3. Coat The Pork Chops

Remove the pork chops from the buttermilk mixture and let the extra drip off. Add one pork chop at a time to the bag. Shake until coated, then press the crust into both sides of the pork chop.

4. Let The Crust Set

Place the coated pork chops on a wire rack over a sheet pan. Let them sit for 10 minutes before baking. This helps the crust stick and crisp up better in the oven.

5. Bake The Pork Chops

Preheat oven to 425°F. Spray the wire rack with cooking spray. Place pork chops on the rack. Lightly drizzle with olive oil or melted butter, then spray the tops with cooking spray.

Bake for 12 minutes. Flip the pork chops, spray lightly again, then bake another 8 to 12 minutes. The pork chops are done when the crust is golden and the inside reaches 145°F.

6. Rest Before Serving

Let the pork chops rest for 5 minutes before cutting. This keeps them juicy.
