New Orleans Style Charbroiled Oysters

 

Ingredients:

  • 2 dozen fresh oysters, shucked on the half shell
  • 1 1/2 cups unsalted butter
  • 8 cloves garlic, minced
  • 1/4 cup finely chopped parsley
  • 1/4 cup grated Parmesan cheese
  • 2 tablespoons Uncle Dibbz Delta Dust seasoning
  • Lemon wedges, for serving
  • Crusty bread, for serving

Oven Version:

  1. Preheat the Oven: Preheat your oven to 500°F.
  2. Prepare the Garlic Butter Sauce:
    • In a saucepan, melt the butter over medium heat.
    • Add the minced garlic and cook for about 1-2 minutes until fragrant.
    • Stir in the Uncle Dibbz Delta Dust seasoning and chopped parsley. Remove from heat.
  3. Arrange the Oysters: Place the shucked oysters on a wire rack set over a baking sheet to keep them stable.
  4. First Cook: Place the oysters in the oven and cook for 1-2 minutes.
  5. Add Butter Sauce: Remove the oysters from the oven and generously spoon the garlic butter mixture over each oyster.
  6. Second Cook: Return the oysters to the oven and cook for another 2-3 minutes.
  7. Add Cheese and Broil: Remove the oysters from the oven, sprinkle grated Parmesan cheese on top, and then broil for an additional 1-2 minutes, or until the cheese is melted and slightly golden.
  8. Serve: Carefully remove the oysters from the oven. Let them cool slightly before serving. Serve with lemon wedges and crusty bread.

Charcoal Grill Version:

  1. Prepare the Grill: Preheat your charcoal grill to high heat. Ensure the coals are hot and ashed over.
  2. Prepare the Garlic Butter Sauce:
    • In a saucepan, melt the butter over medium heat.
    • Add the minced garlic and cook for about 1-2 minutes until fragrant.
    • Stir in the Uncle Dibbz Delta Dust seasoning and chopped parsley. Remove from heat.
  3. Arrange the Oysters: Place the shucked oysters on the grill. Use a wire rack or a grilling tray to keep them stable if needed.
  4. First Cook: Grill the oysters for 1-2 minutes directly over the heat.
  5. Add Butter Sauce: Remove the oysters from the grill and generously spoon the garlic butter mixture over each oyster.
  6. Second Cook: Return the oysters to the grill and cook for another 2-3 minutes.
  7. Add Cheese and Broil: Sprinkle grated Parmesan cheese on top of each oyster, then cover the grill and cook for an additional 1-2 minutes, or until the cheese is melted and slightly golden.
  8. Serve: Carefully remove the oysters from the grill. Let them cool slightly before serving. Serve with lemon wedges and crusty bread.
