Ingredients
- 2 racks baby back ribs
- HXT Sauce (binder)
- Durtty Bird Rub Rub Nashville Hot (seasoning)
- Memphis Bussin BBQ Rub (for the wrap)
- Honey
- 8 pats unsalted butter (4 per rack)
- Apple cider vinegar + water (50/50 mix in a spray bottle)
- Heavy-duty foil
- Optional: Extra HXT Sauce or your favorite BBQ glaze for finishing
Instructions (Smoker Method)
1. Prep the Ribs
Remove the membrane from the back of the ribs and pat dry with paper towels. Lightly coat both sides with HXT Sauce as a binder.
2. Season
Generously coat both sides of the ribs with Durtty Bird Rub Rub Nashville Hot. Let sit at room temperature for 20–30 minutes.
3. Smoke Low & Slow
Preheat smoker to 250°F. Place ribs meat-side up directly on the grates. Smoke for 2.5 to 3 hours, spritzing every 45 minutes with apple cider vinegar and water mixture.
4. Wrap the Ribs
Place two sheets of foil per rack on your work surface. Drizzle each with honey, sprinkle Memphis Bussin BBQ Rub, and add 4 pats of butter. Lay the ribs meat-side down on top. Wrap tightly and return to the smoker for another 2 hours at 250°F.
5. Unwrap & Finish
Carefully remove the ribs from the foil and place them back on the smoker, meat-side up. Optionally brush with additional HXT Sauce or your favorite glaze. Cook uncovered for 15–30 minutes to set the bark.
6. Rest & Slice
Let ribs rest for 15 minutes. Slice between the bones and serve hot.
Oven Method Instructions
1. Prep and Season
Follow steps 1 and 2 from above. Preheat your oven to 300°F.
2. Bake (Uncovered)
Place the seasoned ribs meat-side up on a wire rack set inside a baking sheet lined with foil. Cover loosely with foil (tent it) and bake for 2.5 to 3 hours. Check occasionally and spritz if needed.
3. Wrap and Cook
Just like the smoker version: Lay out two sheets of foil, drizzle with honey, sprinkle with Memphis Bussin BBQ Rub, and add butter. Wrap ribs tightly, place back on the baking sheet, and return to the oven for another 2 hours.
4. Finish
Unwrap the ribs and return to the oven, meat-side up. Optionally brush with extra HXT Sauce. Bake uncovered for 15–20 minutes to finish and set the sauce.
5. Rest & Serve
Let ribs rest for 15 minutes before slicing. Serve hot.
