Mother's Mac 'n Cheese
Ingredients
- 1 box macaroni (about 1 lb)
- 2 tablespoons flour
- 2 cups evaporated milk
- 1 stick butter (plus extra for greasing the dish)
- 2 cups shredded sharp cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 1–2 teaspoons Uncle Dibbz Delta Dust
- 2 eggs, beaten
- Salt, to taste
Instructions
- Prepare the Pasta: Boil macaroni in salted water until al dente. Drain and set aside.
- Butter the Casserole Dish: Grease the inside of your casserole dish with butter to prevent sticking.

Make the Cheese Sauce:
- Melt the butter in a saucepan over medium heat. Stir in the flour to form a roux.
- Gradually whisk in the evaporated milk, stirring constantly to avoid lumps.
- Add Uncle Dibbz Delta Dust and stir until combined.
- Slowly mix in the shredded cheddar and mozzarella cheeses. Stir until the sauce is smooth and creamy. Taste and adjust seasoning as needed.
- Combine with Eggs: Remove the cheese sauce from heat and quickly stir in the beaten eggs to incorporate without scrambling.

Assemble and Bake:
- Preheat your oven to 375°F (190°C).
- Place the cooked macaroni into the buttered casserole dish.
- Pour the cheese sauce over the pasta, ensuring all the macaroni is coated.
- Cover the dish with foil and bake for 45 minutes, or until bubbly and set.
- Broil for a Golden Top: Remove the foil and set your oven to broil on high. Broil the mac and cheese uncovered for 3–5 minutes, watching closely to avoid burning.
