Mother's Mac 'n Cheese


Ingredients

  • 1 box macaroni (about 1 lb)
  • 2 tablespoons flour
  • 2 cups evaporated milk
  • 1 stick butter (plus extra for greasing the dish)
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup shredded mozzarella cheese
  • 1–2 teaspoons Uncle Dibbz Delta Dust
  • 2 eggs, beaten
  • Salt, to taste

Instructions

  1. Prepare the Pasta: Boil macaroni in salted water until al dente. Drain and set aside.
  2. Butter the Casserole Dish: Grease the inside of your casserole dish with butter to prevent sticking.
  3. Make the Cheese Sauce:
    • Melt the butter in a saucepan over medium heat. Stir in the flour to form a roux.
    • Gradually whisk in the evaporated milk, stirring constantly to avoid lumps.
    • Add Uncle Dibbz Delta Dust and stir until combined.
    • Slowly mix in the shredded cheddar and mozzarella cheeses. Stir until the sauce is smooth and creamy. Taste and adjust seasoning as needed.
  4. Combine with Eggs: Remove the cheese sauce from heat and quickly stir in the beaten eggs to incorporate without scrambling.
  5. Assemble and Bake:
    • Preheat your oven to 375°F (190°C).
    • Place the cooked macaroni into the buttered casserole dish.
    • Pour the cheese sauce over the pasta, ensuring all the macaroni is coated.
    • Cover the dish with foil and bake for 45 minutes, or until bubbly and set.
  6. Broil for a Golden Top: Remove the foil and set your oven to broil on high. Broil the mac and cheese uncovered for 3–5 minutes, watching closely to avoid burning.
