  1. Preheat oven: Set to 400°F.
  2. Make the marinade: In a large bowl, whisk lemon juice, olive oil, Durtty Bird Rub, Atlanta Lemon Pepper, Memphis Bussin BBQ Rub, and soy sauce. Add a splash of water if too thick.
  3. Coat the chicken: Pat chicken dry and toss in marinade until fully coated. Let sit 10–30 minutes at room temperature.
  4. Roast: Place chicken skin-side up on a foil-lined baking sheet. Roast 40–45 minutes, or until internal temp reaches 165°F. Optional: Broil 2–3 minutes at the end for crispy, charred skin.
  5. Rest & Serve: Let chicken rest 5 minutes before serving. Pair with corn, broccoli, and Texas toast for the full Medieval Times-inspired dinner.
