Medieval Times-Style Roasted Chicken

Ingredients
- 3–4 chicken leg quarters (or 6–8 bone-in, skin-on thighs or drumsticks)
- 2 cups lemon juice (fresh or bottled)
- 2 tablespoons olive oil
- 2 tablespoons Uncle Dibbz Durtty Bird Rub
- 2 tablespoons Uncle Dibbz Atlanta Lemon Pepper – Mild
- 1 tablespoon Uncle Dibbz Memphis Bussin BBQ Rub
- 1 tablespoon soy sauce (optional, adds umami depth)
- ¼ cup water (optional, if marinade needs thinning)
Instructions
- Preheat oven: Set to 400°F.
- Make the marinade: In a large bowl, whisk lemon juice, olive oil, Durtty Bird Rub, Atlanta Lemon Pepper, Memphis Bussin BBQ Rub, and soy sauce. Add a splash of water if too thick.
- Coat the chicken: Pat chicken dry and toss in marinade until fully coated. Let sit 10–30 minutes at room temperature.
- Roast: Place chicken skin-side up on a foil-lined baking sheet. Roast 40–45 minutes, or until internal temp reaches 165°F. Optional: Broil 2–3 minutes at the end for crispy, charred skin.
- Rest & Serve: Let chicken rest 5 minutes before serving. Pair with corn, broccoli, and Texas toast for the full Medieval Times-inspired dinner.
Notes
- No extra salt or sugar needed — the rubs bring the perfect balance of heat, citrus, and sweet.
- Works with drumsticks, thighs, or wings.
- Best served fresh out of the oven, but leftovers reheat well in the oven.
