Lite Fried Cabbage

Ingredients
- 1 large head green cabbage, chopped (about 8–10 cups)
- 12 oz turkey andouille sausage, sliced into rounds
- 1 medium white onion, sliced
- ½ red bell pepper, sliced
- ½ green bell pepper, sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon Uncle Dibbz King Creole No Salt Blend
- 1 teaspoon Uncle Dibbz Delta Dust Blackened Seasoning
- 1 tablespoon apple cider vinegar
- Salt and black pepper to taste
- Optional finish: squeeze of lemon or pinch of red pepper flakes
Instructions
- Heat olive oil in a deep sauté pan or Dutch oven over medium heat. Add the turkey andouille sausage and cook 4–5 minutes until browned. Remove and set aside.
- In the same pan, add the white onion and bell peppers. Sauté 3–4 minutes until they soften. Add garlic and cook 30 seconds more.
- Add chopped cabbage a handful at a time, letting it wilt before adding more. Sprinkle in King Creole and Delta Dust as you go, tossing well to coat.
- Once all cabbage is in, cover the pan and reduce heat to medium-low. Let it steam 10–12 minutes, stirring occasionally, until tender but not mushy.
- Return the sausage to the pan, add apple cider vinegar, and toss to combine. Cook uncovered another 3–4 minutes to let flavors meld.
- Adjust seasoning with salt, pepper, or lemon juice. Serve warm.
