Lemon Herb Baked Salmon

Ingredients

  • 2 salmon fillets (6–8 oz each)
  • 2 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tbsp Uncle Dibbz Straight Drop Rub
  • Optional: Lemon slices for garnish
  • Optional: Fresh parsley, chopped

Equipment

  • Mixing bowl
  • Whisk or spoon
  • Resealable plastic bag or shallow dish
  • Baking sheet
  • Parchment paper or foil

Instructions

  1. Make the marinade: In a bowl, whisk together olive oil, lemon juice, minced garlic, and Uncle Dibbz Straight Drop Rub.
  2. Marinate the salmon: Place salmon in a resealable bag or shallow dish. Pour marinade over the fillets and coat evenly. Cover and refrigerate for at least 30 minutes.
  3. Preheat the oven: Set oven to 400°F.
  4. Prepare for baking: Line a baking sheet with parchment paper. Place salmon skin-side down. Spoon any remaining marinade over the top.
  5. Bake: Cook for 12–15 minutes, depending on thickness, until salmon flakes easily with a fork and reaches an internal temperature of 145°F.
  6. Finish and serve: Garnish with fresh lemon slices and parsley if desired. Serve immediately.

Serving Suggestions

  • Serve over jasmine rice or quinoa
  • Pair with roasted asparagus or sautéed spinach
  • Great for meal prep — keeps well refrigerated for up to 3 days

Dibbs Tip

Don’t overcook salmon. Pull it right when it flakes and still looks slightly glossy in the center. Residual heat will finish the job and keep it juicy.
