Ingredients
- 2 catfish filets
- 1/4 cup olive oil
- Juice of 1 lemon
- Zest of 1 lemon
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 2 to 3 tablespoons Uncle Dibbz Delta Dust Blackened Seasoning
- Lemon wedges, for serving
- Extra parsley, for garnish
Instructions
- Preheat the oven: Preheat your oven to 400°F. Line a baking sheet or baking dish with parchment paper or lightly grease it.
- Make the marinade: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, and chopped parsley.
- Season the fish: Generously season both sides of the catfish filets with Uncle Dibbz Delta Dust Blackened Seasoning.
- Marinate: Place the seasoned catfish filets in a shallow dish and pour the lemon herb marinade over the top. Let the fish marinate for at least 20 minutes. For deeper flavor, marinate in the refrigerator for up to 1 hour.
- Prepare for baking: Transfer the marinated catfish filets to the prepared baking sheet. Spoon any remaining marinade over the top.
- Bake: Bake for 12 to 15 minutes, or until the fish flakes easily with a fork.
- Finish and serve: Garnish with extra parsley and serve with lemon wedges on the side.
Recipe Tips
- Do not overcook the catfish or it can dry out.
- If your filets are thicker, add 2 to 3 extra minutes as needed.
- Serve with rice, roasted vegetables, or a fresh side salad.
