Lemon Herb Baked Catfish

Ingredients

  • 2 catfish filets
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • Zest of 1 lemon
  • 3 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 2 to 3 tablespoons Uncle Dibbz Delta Dust Blackened Seasoning
  • Lemon wedges, for serving
  • Extra parsley, for garnish

Instructions

  1. Preheat the oven: Preheat your oven to 400°F. Line a baking sheet or baking dish with parchment paper or lightly grease it.
  2. Make the marinade: In a small bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, and chopped parsley.
  3. Season the fish: Generously season both sides of the catfish filets with Uncle Dibbz Delta Dust Blackened Seasoning.
  4. Marinate: Place the seasoned catfish filets in a shallow dish and pour the lemon herb marinade over the top. Let the fish marinate for at least 20 minutes. For deeper flavor, marinate in the refrigerator for up to 1 hour.
  5. Prepare for baking: Transfer the marinated catfish filets to the prepared baking sheet. Spoon any remaining marinade over the top.
  6. Bake: Bake for 12 to 15 minutes, or until the fish flakes easily with a fork.
  7. Finish and serve: Garnish with extra parsley and serve with lemon wedges on the side.

  • If your filets are thicker, add 2 to 3 extra minutes as needed.
