  • 8 lollipop lamb chops
  • 2 tablespoons Uncle Dibbz Jerk Nice Spice
  • 2 tablespoons olive oil
  • Juice of 2 limes
  • 4 cloves garlic, minced
  • 1 tablespoon thyme, finely chopped
  • 2 tablespoons soy sauce
  • 4 scallions, roughly chopped
  • 1 tablespoon ginger paste
  • 1 medium white onion, chopped


  1. Prepare the Marinade: In a food processor, combine lime juice, thyme, garlic, soy sauce, scallions, ginger paste, and white onion. Add Uncle Dibbz Jerk Nice Spice. Blend until smooth. Gradually add olive oil to emulsify.
  2. Marinate the Lamb: Place lamb chops in a bowl or resealable plastic bag. Pour marinade over chops, ensuring even coating. Seal and refrigerate for 3 hours.
  3. Prep for Cooking: Remove lamb chops from the refrigerator 20 minutes before cooking to reach room temperature.
  4. Cook the Lamb: Heat a cast iron skillet over medium-high heat. Place chops in skillet, cooking about 7 minutes each side until well-browned and cooked to desired doneness.
  5. Rest and Serve: Let chops rest a few minutes after cooking, then serve with lime wedges and a sprinkle of thyme or scallions.
