Ingredients
- 1 1/4 pounds sirloin or New York strip steak, cut into 1 to 1 1/2 inch pieces
- 1 tablespoon Uncle Dibbz Texas Steak Rub
- 1 tablespoon avocado oil or vegetable oil
- 4 tablespoons unsalted butter
- 1 tablespoon olive oil
- 4 garlic cloves, thinly sliced
- 1 tablespoon Uncle Dibbz Jerk Nice Spice
- 2 tablespoons beef broth or water
- Juice of 1/2 lime
- Fresh thyme leaves for garnish
Instructions
- Prepare the steak. Pat the steak pieces completely dry with paper towels. Place them in a bowl, add the Texas Steak Rub and toss until every piece is evenly seasoned.
- Heat the skillet. Heat a large stainless steel or cast iron skillet over medium high heat. Add the avocado oil and allow it to get hot before adding the steak.
- Sear the steak bites. Arrange the steak in a single layer without overcrowding the skillet. Cook for about 2 minutes without moving the pieces. Flip and cook for another 1 to 2 minutes. Cook in batches when necessary so the steak sears instead of steaming.
- Remove the steak. Transfer the steak bites to a plate while they are slightly under your preferred level of doneness. They will finish cooking when they return to the sauce.
- Start the garlic butter. Reduce the heat to medium low. Add the butter and olive oil to the same skillet. Once the butter has melted, add the sliced garlic and cook for about 30 seconds, stirring frequently.
- Add the jerk flavor. Stir in the Jerk Nice Spice and cook for 15 to 20 seconds. Keep the seasoning moving through the butter so it becomes fragrant without burning.
- Build the sauce. Pour in the beef broth or water. Stir and simmer for 30 to 60 seconds while scraping the browned steak pieces from the bottom of the skillet.
- Finish the steak bites. Return the steak and any juices from the plate to the skillet. Toss the steak in the jerk garlic butter sauce and cook for 1 to 2 minutes, or until the steak reaches your preferred level of doneness.
- Garnish and serve. Turn off the heat and squeeze the lime juice over the steak. Finish with fresh thyme leaves and serve immediately.

- Dry steak develops a better crust, so do not skip the paper towel step.
- Cook the steak in batches if your skillet is not large enough to hold it in one layer.
- Keep the heat low when adding the Jerk Nice Spice so the seasoning does not scorch.
- Add the lime juice after turning off the heat to keep the flavor bright and fresh.
- Serve the steak bites with rice, roasted potatoes, fries or toasted bread to soak up the jerk butter sauce.
