  1. Pat the salmon dry with paper towels. Season the flesh side with Delta Dust.
  2. Add oil to a cold skillet. Place the salmon in the pan skin side down, then turn the heat to medium.
  3. Cook skin side down for 6 to 8 minutes, until the skin is crisp and the salmon is mostly cooked.
  4. Flip the salmon and cook flesh side down for 30 to 60 seconds. Remove the salmon from the pan.
  5. Lower the heat to medium low. Add butter and cook until it turns golden and smells nutty.
  6. Add garlic and stir for about 20 seconds. Add BBQ sauce, honey, lemon juice, and Memphis Bussin BBQ Rub. Stir until the glaze is smooth and glossy.
  7. Place the salmon back in the pan skin side down. Spoon the glaze over the top for 1 to 2 minutes, until the salmon is sticky and cooked through.
  8. Finish with fresh lemon and serve hot.

Recipe Notes

  • Keep the salmon skin side down when glazing so the top gets sticky and the bottom stays crisp.
  • If the glaze gets too thick, add a small splash of water.
  • For fully cooked salmon, cook to 145°F. For a juicier center, pull it a little earlier and let it rest.
