Grilled Salmon with Mango Salsa
Ingredients:
- 4 salmon fillets
- Uncle Dibbz Straight Drop Rub, to taste
- 1 tablespoon olive oil
- 2 ripe mangoes, peeled and diced
- 1 red bell pepper, seeded and diced
- 1/2 red onion, diced
- 2 tablespoons chopped fresh cilantro
- Juice of 1 lime
Instructions:

Preheat your grill to medium-high heat.

Season the salmon fillets with Uncle Dibbz Straight Drop Rub, to taste on both sides.

Brush the salmon fillets with olive oil and place them on the grill skin-side down.

Grill the salmon for about 4-5 minutes per side or until cooked through.

While the salmon is cooking, prepare the mango salsa. In a medium-sized bowl, combine the diced mango, red bell pepper, red onion, jalapeño pepper, cilantro, and lime juice. Season with Uncle Dibbz Straight Drop Rub, to taste to taste.

When the salmon is done, remove it from the grill and let it rest for a few minutes.

Serve the grilled salmon with the mango salsa on top. That's good Shawty!
