Georgia Country Omelette


Ingredients:

  • 3 large eggs, whisked
  • 1/2 cup diced bacon
  • 1/4 cup diced bell peppers (use a mix of colors for added flair)
  • 1/4 cup diced red onion
  • 1/4 cup shredded Colby jack cheese
  • 1/4 cup cooked and crumbled breakfast sausage (optional)
  • 2 tablespoons butter
  • A dash of Uncle Dibbz Straight Drop Rub to elevate the flavors

Instructions:

  1. Prep Your Ingredients: Dice your bacon, bell peppers, and red onion. If you're using sausage, cook it in advance and crumble it. Shred your Colby jack cheese.
  2. Preheat Pan: Place a non-stick skillet over medium heat and melt the butter.
  3. Sauté Veggies and Meats: Add the diced bacon, bell peppers, and red onion to the pan. Sauté for about 3-5 minutes until the veggies soften. Add in crumbled sausage if you're using it. Sprinkle a bit of Uncle Dibbz Straight Drop Rub for extra flavor.
  4. Prep the Eggs: In a bowl, whisk together the eggs and a dash of cayenne pepper.
  5. Cook the Omelette: Pour the whisked eggs into the skillet, over the sautéed veggies and meats. Let it cook undisturbed for about 2 minutes or until the edges start to set.
  6. Add Cheese: Sprinkle the shredded Colby jack cheese over one half of the omelette.
  7. Fold and Cook: Gently fold the omelette in half, covering the cheese. Cook for another 2-3 minutes or until fully set.
  8. Serve: Slide the omelette onto a plate, season with a little more Uncle Dibbz Straight Drop Rub if desired, and enjoy your Georgia Omelette!
