Garlic Butter Steak and Potatoes

Ingredients

  • 1.5 lbs ribeye steak, cut into 1-inch cubes
  • Uncle Dibbz Texas Steak Rub, to taste
  • 2 tablespoons unsalted butter
  • 5 cloves garlic, minced
  • 1 large russet potato, cut into cubes
  • 2 tablespoons olive oil, divided
  • 1/3 cup fresh chopped parsley

Instructions

  1. Place the cubed potatoes in a bowl of water and soak for 15 to 30 minutes. Drain and pat dry before cooking.
  2. Add the steak cubes to a bowl. Rub with 1 tablespoon olive oil and season generously with Uncle Dibbz Texas Steak Rub.
  3. Heat a large skillet over medium-high heat. Add 1 tablespoon olive oil. Once hot, add the steak cubes and sear for 2 to 3 minutes per side, until browned. Remove the steak from the pan and set aside.
  4. Reduce the heat to medium. Add the butter to the same pan, then add the potatoes. Season with Uncle Dibbz Texas Steak Rub and cook for 10 to 15 minutes, stirring occasionally, until browned and fork tender.
  5. Add the minced garlic and cook for 30 to 60 seconds, stirring so it does not burn.
  6. Add the steak back to the skillet and toss everything together in the garlic butter. Cook for another 1 to 2 minutes, just until the steak is warmed through.
  7. Garnish with fresh chopped parsley and serve hot.
