Instructions

  1. Use a sharp knife to cut each lobster tail completely in half lengthwise, straight through the shell and meat. Separate the halves. You should have eight lobster halves total.
  2. Set a large, deep skillet with a lid over medium low heat. Add the olive oil and 4 tablespoons of butter.
  3. Once the butter melts, add the sliced garlic. Stir for about 30 seconds, then add the Atlanta Lemon Pepper Mild and Straight Drop Seafood Boil. Stir for about 1 minute to build the flavored garlic butter sauce.
  4. Place the lobster halves meat side down directly into the sauce. Let them cook untouched for 1 1/2 to 2 minutes so the meat gets direct contact with the flavored butter.
  5. Flip the lobster halves shell side down. Pour the water around the lobster, then spoon the garlic butter over the exposed meat.
  6. Cover and cook for 5 to 7 minutes, basting once halfway through, until the lobster is opaque and cooked through. If your tails are larger than 5 oz, add another 1 to 2 minutes as needed.
  7. Uncover and add the remaining 2 tablespoons of butter. Spoon the fresh butter sauce over the lobster for 1 to 2 minutes.
  8. Turn off the heat. Finish with lemon juice and parsley. Serve straight from the skillet with toasted bread for dipping.

Unc's Tip

Do not add the water until after the lobster has cooked meat side down in the garlic butter. That first contact gives the meat its flavor. The water and lid come in after the flip to gently finish the lobster without drying it out.
