Garlic and Herb Rack of Lamb + Veggies

Preheat your grill to medium heat. 2. In a blender, combine the garlic, fresh herbs, and olive oil. Blend until you get a smooth paste. 3. Season the rack of lamb with Uncle Dibbz Straight Drop Rub. Then, rub the garlic-herb paste over the lamb, ensuring it is evenly coated. 4. Toss the mixed veggies in a little olive oil and sprinkle with Uncle Dibbz Straight Drop Rub. 5. Set up a grill-safe rack over a tray or foil packet of veggies. Place the rack of lamb bone side down on the rack. 6. Grill the lamb over the veggies for about 10-12 minutes per side for medium-rare, or cook it to your desired level of doneness. The lamb’s drippings will help tenderize and slightly char the veggies. 7. Once cooked, let the lamb rest for 10 minutes before slicing. 8. Serve the grilled rack of lamb with the roasted veggies.
