Garlic Herb Rack of Lamb

Ingredients:

  • 1 rack of lamb, about 1.5 to 2 pounds
  • 5 cloves garlic
  • A handful of fresh herbs such as rosemary, thyme, and parsley
  • 1/4 cup olive oil
  • Uncle Dibbz Straight Drop Rub, to taste
  • 1 pound mixed veggies, such as red pepper and onions

Instructions:

  1. Preheat your grill to medium heat.
  2. Add the garlic, fresh herbs, and olive oil to a blender or food processor. Blend until smooth.
  3. Season the rack of lamb generously with Uncle Dibbz Straight Drop Rub.
  4. Rub the garlic and herb mixture all over the lamb until evenly coated.
  5. Toss the veggies with a little olive oil and season with Uncle Dibbz Straight Drop Rub.
  6. Set up a grill safe rack over a tray or foil packet of veggies. Place the lamb bone side down on the rack so the drippings fall onto the vegetables as it cooks.
  7. Grill the lamb for about 10 to 12 minutes per side for medium rare, or cook until it reaches your preferred doneness. The veggies should become tender and lightly charred underneath.
  8. Remove the lamb from the grill and let it rest for 10 minutes before slicing.
  9. Serve the sliced lamb with the grilled veggies.
