Crispy Oven Fried Chicken
This crispy oven fried chicken gives you that fried chicken feeling without pulling out a pot of grease. It uses the shake and bake method with Uncle Dibbz Durtty Bird Rub on the chicken and Uncle Dibbz Straight Drop Rub in the dry coating for a seasoned, crunchy crust.

Ingredients
For the Chicken
- 8 pieces bone in chicken, thighs and drumsticks preferred
- 1 cup buttermilk
- 1 tablespoon hot sauce
- 1 1/2 tablespoons Uncle Dibbz Durtty Bird Rub
- 1 tablespoon olive oil or melted butter
- Cooking spray
For the Dry Shake Mix
- 1 1/2 cups panko breadcrumbs
- 1/2 cup plain breadcrumbs
- 1/3 cup all purpose flour
- 2 tablespoons cornstarch
- 2 tablespoons Uncle Dibbz Straight Drop Rub
Instructions
1. Season the Chicken
Pat the chicken dry with paper towels. Add the chicken to a large bowl with buttermilk, hot sauce, and Uncle Dibbz Durtty Bird Rub. Mix until the chicken is fully coated.
Let the chicken marinate for at least 30 minutes. For deeper flavor, cover and refrigerate overnight.
2. Make the Dry Shake Mix
In a large zip top bag, add panko breadcrumbs, plain breadcrumbs, flour, cornstarch, and Uncle Dibbz Straight Drop Rub. Seal the bag and shake until the dry mix is evenly combined.
3. Coat the Chicken
Remove the chicken from the buttermilk mixture and let the extra marinade drip off. Add 2 to 3 pieces of chicken to the bag at a time.
Seal the bag and shake until the chicken is fully coated. After shaking, press the coating into the chicken so it sticks well.
4. Let the Crust Set
Place the coated chicken on a wire rack over a sheet pan. Let it sit for 10 to 15 minutes before baking. This helps the coating stick and gives the crust a better texture in the oven.
5. Bake the Chicken
Preheat the oven to 425°F. Spray the wire rack with cooking spray, then place the chicken on the rack.
Lightly drizzle the chicken with olive oil or melted butter, then spray the tops with cooking spray.
Bake for 25 minutes. Flip the chicken, spray lightly again, then bake for another 15 to 20 minutes.
The chicken is done when the crust is golden brown and the inside reaches 165°F. For thighs and drumsticks, 175°F to 185°F gives you more tender meat.
6. Optional Crispy Finish
For extra color and crunch, broil the chicken for 1 to 2 minutes at the end. Watch it closely so the crust does not burn.

Serve this crispy oven fried chicken with mac and cheese, green beans, mashed potatoes, collard greens, cornbread, or a simple side salad.
Dibbz Tip
The Durtty Bird Rub goes directly on the chicken so the meat itself has flavor. The Straight Drop Rub goes in the dry mix so the crust has that seasoned crunch. That is the key to making this taste like more than just baked chicken.
