Crispy Buttermilk Fried Shrimp
Everybody knows a fish fry, but have you ever had a shrimp fry? This crispy buttermilk fried shrimp recipe uses jumbo Gulf shrimp, a quick seafood boil marinade, and a simple seasoned dry mix for shrimp that fry up golden, crunchy, and juicy.

Ingredients
For the Shrimp
- 1 pound jumbo Gulf shrimp, peeled, deveined, and butterflied
- Oil for frying
- Fresh parsley, chopped
- Lemon wedges, for serving
- Optional light sprinkle of Delta Dust after frying
Buttermilk Seafood Boil Marinade
- 3/4 cup buttermilk
- 1 egg
- 1 to 2 tablespoons hot sauce
- 1 tablespoon Straight Drop Seafood Boil
- 1 teaspoon lemon juice
Delta Dust Dry Mix
- 1 cup all purpose flour
- 1/2 cup cornstarch
- 1 tablespoon Delta Dust
- 1/2 teaspoon baking powder
Instructions
- Peel, devein, and butterfly the shrimp. Pat the shrimp mostly dry with paper towels.
- In a bowl, mix together the buttermilk, egg, hot sauce, Straight Drop Seafood Boil, and lemon juice.
- Add the shrimp to the buttermilk marinade and toss until fully coated. Let the shrimp marinate for 15 to 20 minutes.
- Add the flour, cornstarch, Delta Dust, and baking powder to a large zip top bag or paper bag. Shake the bag to mix the dry ingredients together.
- Remove the shrimp from the marinade and let the excess drip off. Add the shrimp to the dry mix bag in batches.
- Shake the shrimp in the bag until every piece is fully coated.
- Place the coated shrimp on a wire rack and let them sit for 5 to 10 minutes. This helps the crust stick better when frying.
- Heat 1 to 1 1/2 inches of oil in a wide skillet, Dutch oven, or deep pan to 350°F.
- Fry the shrimp in batches for 2 to 3 minutes total, flipping if needed, until golden, crispy, and cooked through.
- Remove the shrimp from the oil and place them on a wire rack. While hot, add a light sprinkle of Delta Dust if desired.
- Finish with chopped parsley and fresh lemon. Serve hot while the shrimp are still crispy.
Recipe Notes
Do not overcrowd the pan. Frying in batches keeps the shrimp crispy and helps the oil temperature stay steady.
Let the extra buttermilk drip off before adding the shrimp to the dry mix. Too much liquid can make the coating gummy.
The Straight Drop Seafood Boil seasons the shrimp in the marinade, while Delta Dust seasons the crust and gives the shrimp that crispy fried seafood color.
