Creamy Seafood Boil Pasta

Ingredients

  • 1 lb pasta
  • 1 lb large shrimp, peeled and deveined
  • 1 lb pre-cooked snow crab clusters
  • 12 oz smoked sausage, sliced
  • 1 stick unsalted butter
  • 5 garlic cloves, minced

  • 1/2 cup reserved pasta water, plus more as needed

Instructions

  1. Cook the pasta. Bring a large pot of water to a boil and cook the pasta according to the package directions until al dente. Before draining, reserve about 1 cup of pasta water. Drain the pasta and set aside.
  2. Sear the sausage. Heat a large, deep skillet over medium-high heat. Add the sliced smoked sausage and cook for 3–4 minutes, or until browned on both sides. Remove the sausage from the skillet and set aside. Leave about 1 tablespoon of the sausage drippings in the skillet.
  3. Bloom the seasonings. Reduce the heat to medium. Add the butter, minced garlic, Straight Drop Seafood Boil, and Delta Dust. Stir continuously for about 1 minute, allowing the garlic to become fragrant and the seasonings to bloom in the butter.
  4. Add the shrimp. Add the shrimp directly to the seasoned garlic butter and toss until completely coated. Cook for about 2 minutes, just until the shrimp begin turning pink. They do not need to be completely cooked yet.
  5. Make the creamy seafood boil sauce. Reduce the heat to medium-low. Pour in the heavy cream, 1/2 cup reserved pasta water, lemon juice, and hot sauce. Stir until everything is combined. Allow the sauce to gently simmer for 2–3 minutes until creamy and slightly thickened.
  6. Add the sausage and crab. Return the browned sausage to the skillet. Nestle the snow crab clusters into the creamy sauce. Cover and cook over low heat for 4–5 minutes, or until the crab is heated through and the shrimp is fully cooked.
  7. Add the pasta. Add the cooked pasta directly to the skillet. Gently toss everything together until the pasta is completely coated in the creamy garlic butter seafood boil sauce.
  8. Finish and serve. If the sauce becomes too thick, add a splash of the remaining reserved pasta water until it reaches your desired consistency. Finish with chopped parsley and serve immediately.

Uncle Dibbz Tips

Don't skip browning the sausage. Those drippings become the first layer of flavor for the entire sauce.

Bloom the seasonings before adding the shrimp. Cooking the Straight Drop Seafood Boil and Delta Dust briefly in the butter and garlic helps wake up the spices and flavors the entire sauce.

Don't overcook your shrimp. You're only giving them a head start when they first hit the skillet. They'll finish cooking while the sauce and crab heat through.

Use the pasta you have. Rotini, penne, rigatoni, shells, or another short pasta all work well. Pasta with ridges and curves is especially good at holding onto the creamy garlic butter sauce.

Keep the sauce loose. This isn't Alfredo. The finished sauce should be creamy, buttery, glossy, and spoonable. Reserved pasta water makes it easy to adjust the consistency before serving.
