Cozy Turkey Stew

Ingredients

  • 1 whole boneless turkey breast (2–3 lb), brined and patted dry
  • 1 tablespoon olive oil
  • 1 tablespoon Uncle Dibbz Durtty Bird Rub
  • 1 medium white onion, chopped
  • 4 garlic cloves, smashed
  • 3 large carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 1.5 lbs red or gold potatoes, halved or cubed
  • 1 bay leaf
  • 1 teaspoon dried thyme or 3 sprigs fresh thyme
  • 2 teaspoons Uncle Dibbz King Creole Blend (No Salt)
  • 1 tablespoon apple cider vinegar
  • 4–5 cups low-sodium chicken broth (enough to cover)
  • 2 cups chopped kale (optional)
  • Fresh parsley, for garnish (optional)
  • Black pepper, to taste

Instructions

  1. Heat olive oil in a large Dutch oven or deep pot over medium-high heat. Season the turkey breast all over with Durtty Bird Rub. Sear on both sides until golden brown (about 4 minutes per side). Remove and set aside.
  2. In the same pot, add onion, garlic, carrots, and celery. Cook for 4–5 minutes until softened. Stir in King Creole Blend, thyme, and bay leaf.
  3. Deglaze with apple cider vinegar and 1 cup of broth, scraping up the brown bits from the bottom of the pot. Add potatoes, then nestle the turkey breast back in. Pour in enough broth to fully cover the meat and vegetables (about 4–5 cups).
  4. Bring to a boil, then reduce heat to low. Cover and simmer gently for 1.5 to 2 hours, flipping the turkey halfway through, until the meat is fork-tender and vegetables are soft.
  5. Remove the turkey breast, shred it with forks or thick-slice it, then return it to the pot. If using kale, stir it in now. Simmer uncovered for another 10 minutes to let the flavors blend.
  6. Ladle the stew into bowls and garnish with chopped parsley and black pepper if desired. Serve warm.
