Chili Lime Grilled Chicken
Ingredients
Chicken:
- 4 chicken leg quarters
- 5 cloves garlic peeled
- 1/3 cup soy sauce
- 2 Tablespoons lime juice
- 1/3 cup of apple cider vinegar
- 1 habanero pepper
- 1 Tablespoon extra virgin olive oil
- 1/2 cup of Uncle Dibbz Big Chili Style
Green Sauce:
- 2 jalapeños
- 1 habanero pepper
- 1 cup fresh cilantro leaves
- 2 cloves garlic peeled
- 1/2 cup mayonnaise
- 1 Tablespoon lime juice
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 Tablespoons extra virgin olive oil
Instructions
- In a food processor, blend the garlic, soy sauce, lime juice, oil, habanero pepper, vinegar, and Uncle Dibbz Big Chili Style.
- Put chicken in a large bowl and add marinade. Cover and place in refrigerator and allow to marinate for 8 to 24 hours.
- Preheat grill to high heat (around 400-degrees).
- Remove chicken from marinade and shake off any extra marinade. Place on the grill grates. Let chicken cook over the flame for 3-5 minutes on each side with the grill open. Then move chicken away from the flame and close grill to maintain the heat. Cook for 35-40 minutes or until chicken reaches an internal temperature of 165°F.
Green Sauce:

Combine all ingredients in a blender process until smooth. Transfer to a bowl and refrigerate until ready to serve. Drizzle the sauce over the chicken or use as a dipping sauce.
