4 lbs boneless skinless chicken thighs (chopped)

1 lb andouille sausage smoked

1 cup each chopped green peppers, celery & onions
- 1/2 cup of chopped jalapenos
- 3-4 bay leaves

1 1/2 cup vegetable or peanut oil
- 1/4 cup of olive oil

3/4 cup all purpose flour
- 1/2 cup of garlic (minced)

Uncle Dibbz King Creole Blend to taste

6 cups chicken broth

2 cups cooked white rice

Pour olive oil into a large high sided pot, and heat up over medium. Once the oil is nice and hot, start adding the chicken and season with Uncle Dibbz King Creole Blend.

Once the chicken is browned, remove it from the oil, and set aside.

To make the roux, pour vegetable or peanut oil into the pot. Once it gets hot start to add flour and continuously whisk over med-low heat for 10 mins. after 10 mins turn the the heat to medium and continue to whisk another 10 mins until the roux turns into a chocolate brown color.

Now add the peppers, celery, garlic and onions into the roux, and cook until they soften. Season veggies to taste with Uncle Dibbz King Creole Blend.

Pour 6 cups of chicken broth into the pot, then place it over medium high.

Add chicken, sausage and bay leaves and bring to a boil. Season again as needed.

Once the pot is boiling reduce to a simmer and cover for 3-4 hours. Stir every 15-20 mins.

Serve in a bowl with white rice. That's good Shawty!
