Chicken and Sausage Gumbo

Ingredients

  • 4 lbs boneless skinless chicken thighs (chopped)
  • 1 lb andouille sausage smoked
  • 1 cup each chopped green peppers, celery & onions
  • 1/2 cup of chopped jalapenos
  • 3-4 bay leaves
  • 1 1/2 cup vegetable or peanut oil
  • 1/4 cup of olive oil
  • 3/4 cup all purpose flour
  • 1/2 cup of garlic (minced)
  • Uncle Dibbz King Creole Blend to taste
  • 6 cups chicken broth
  • 2 cups cooked white rice

Instructions

  • Pour olive oil into a large high sided pot, and heat up over medium. Once the oil is nice and hot, start adding the chicken and season with Uncle Dibbz King Creole Blend.
  • Once the chicken is browned, remove it from the oil, and set aside.
  • To make the roux, pour vegetable or peanut oil into the pot. Once it gets hot start to add flour and continuously whisk over med-low heat for 10 mins. after 10 mins turn the the heat to medium and continue to whisk another 10 mins until the roux turns into a chocolate brown color.
  • Now add the peppers, celery, garlic and onions into the roux, and cook until they soften. Season veggies to taste with Uncle Dibbz King Creole Blend.
  • Pour 6 cups of chicken broth into the pot, then place it over medium high.
  • Add chicken, sausage and bay leaves and bring to a boil. Season again as needed.
  • Once the pot is boiling reduce to a simmer and cover for 3-4 hours. Stir every 15-20 mins.
  • Serve in a bowl with white rice. That's good Shawty!
