Ingredients
For the Meatballs:
- 1/2 lb shrimp, peeled, deveined
- 1/2 lb crab meat, picked over for shells
- 1/2 lb catfish fillets
- 1/2 cup breadcrumbs
- 1/4 cup chopped green onions
- 1/4 cup chopped celery
- 1/4 cup chopped bell pepper
- 1/4 cup chopped onion
- 2 cloves garlic
- 1 large egg
- 2 tbsp mayonnaise
- 1 tbsp Dijon mustard
- 2 tsp Uncle Dibbz Delta Dust
- 1 tsp hot sauce (optional)
- 1 tsp Uncle Dibbz King Creole Blend
For the Creamy Spaghetti:
- 1 lb spaghetti
- 2 tbsp butter
- 2 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 tsp Uncle Dibbz Delta Dust (or your favorite Cajun seasoning)
- 1 tsp Uncle Dibbz King Creole Blend
- 2 tbsp chopped fresh parsley (for garnish)
Instructions
For the Meatballs:
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a food processor, add the shrimp, crab meat, and catfish fillets. Pulse until the seafood is finely chopped but not pureed.
- Add the breadcrumbs, green onions, celery, bell pepper, onion, garlic, egg, mayonnaise, Dijon mustard, Uncle Dibbz Delta Dust, and hot sauce to the food processor. Pulse until the mixture is well combined and forms a cohesive mixture.
- Form the mixture into 1 1/2-inch meatballs and place them on the prepared baking sheet.
- Bake the meatballs in the preheated oven for 10 minutes to firm them up slightly. They will finish cooking in the sauce.
For the Creamy Spaghetti:
- Cook the spaghetti according to package instructions until al dente. Drain and set aside.
- In a large skillet, melt the butter over medium heat. Add the minced garlic and cook for about 1 minute, until fragrant.
- Add the heavy cream and bring to a simmer. Cook for 2-3 minutes, until the cream starts to thicken.
- Stir in the grated Parmesan cheese, Uncle Dibbz Delta Dust, and Uncle Dibbz King Creole Blend. Cook for another 2-3 minutes, until the sauce is smooth and creamy.
- Add the partially baked meatballs to the skillet with the creamy sauce, covering the meatballs with the sauce. Simmer for 10-15 minutes, or until the meatballs are fully cooked through and have absorbed some of the sauce's flavors.
- Add the cooked spaghetti to the skillet with the creamy sauce and meatballs, tossing to coat the pasta evenly.
Assembly:
- Plate the creamy spaghetti on serving dishes.
- Top with the Cajun seafood meatballs and sauce.
- Garnish with chopped fresh parsley.
