Mason Jar Salad

This Mason Jar Salad is a quick, easy, zero salt lunch option packed with chicken, black beans, corn, fresh vegetables, avocado, mixed greens, and a simple BeBe’s Salt Free dressing.

Ingredients

For the Salad

  • 2 boneless, skinless chicken thighs
  • 1 cup black beans, drained and rinsed
  • 1 cup corn
  • 1 red bell pepper, diced
  • 1 small red onion, diced
  • 1 cucumber, sliced
  • 1 avocado, diced
  • 2 cups mixed greens
  • 1 tablespoon Uncle Dibbz BeBe's Salt Free, for seasoning the chicken

For the Dressing

Instructions

  1. Cook the Chicken: Season the chicken thighs generously with Uncle Dibbz BeBe's Salt Free. Cook in a skillet over medium heat until fully cooked, about 6 to 7 minutes per side. Set aside to cool, then dice into bite sized pieces.
  2. Make the Dressing: In a mason jar, add olive oil, lemon juice, apple cider vinegar, and Uncle Dibbz BeBe's Salt Free. Seal the jar and shake until combined.
  3. Start Layering: Keep the dressing at the bottom of the jar. Add black beans, corn, red bell pepper, red onion, cucumber, and diced chicken.
  4. Add the Fresh Ingredients: Layer the avocado on top of the chicken, then finish with mixed greens so they stay fresh and crisp.
  5. Store: Seal the mason jar tightly and refrigerate until ready to eat.
  6. Serve: When ready to eat, shake the jar well to coat everything in the dressing, then enjoy straight from the jar or pour into a bowl.
