Blackened Chicken with Roasted Potatoes

Instructions:

1. Marinate the Chicken:

  1. In a large ziplock bag, combine chicken pieces, Delta Dust Blackened Seasoning, and olive oil.
  2. Seal and shake well to coat the chicken evenly.
  3. Marinate for at least 30 minutes (or overnight for deeper flavor).

2. Prepare the Potatoes:

  1. Preheat your oven to 425°F.
  2. On a silicone-lined baking sheet, add halved red potatoes.
  3. Drizzle with 2 tbsp olive oil and sprinkle Bebe’s Salt-Free Seasoning over the potatoes.
  4. Toss the potatoes directly on the sheet until they’re well coated.

3. Set Up the Wire Rack:

  1. Place a wire rack over the sheet pan with the seasoned potatoes.
  2. Lightly oil the wire rack to prevent the chicken from sticking.

4. Arrange and Roast:

  1. Place the marinated chicken pieces on the wire rack above the potatoes.
  2. Roast in the 425°F oven for 40-45 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are crispy and tender.

5. Optional Broil for Extra Crisp:

  1. For extra crispy chicken skin, broil for an additional 2-3 minutes at the end, keeping a close eye to avoid burning.

6. Serve:

  1. Let the chicken rest for 5 minutes before serving.
  2. Gently toss the roasted potatoes in any drippings that collected on the pan for added flavor.
