Servings: 4-6
Prep Time: 15 minutes
Marinate Time: 30 minutes (or overnight)
Cook Time: 45 minutes
Total Time: ~1 hour (plus marinate time)
Ingredients:
For the Chicken:
- 4 lbs mixed chicken pieces (whole wings, bone-in thighs, drumsticks)
- 3 tbsp Uncle Dibbz Delta Dust Blackened Seasoning
- 1/4 cup olive oil
For the Potatoes:
- 2 lbs red potatoes, halved
- 2 tbsp Uncle Dibbz Bebe’s Salt-Free Seasoning
- 2 tbsp olive oil
Instructions:
1. Marinate the Chicken:
- In a large ziplock bag, combine chicken pieces, Delta Dust Blackened Seasoning, and olive oil.
- Seal and shake well to coat the chicken evenly.
- Marinate for at least 30 minutes (or overnight for deeper flavor).
2. Prepare the Potatoes:
- Preheat your oven to 425°F.
- On a silicone-lined baking sheet, add halved red potatoes.
- Drizzle with 2 tbsp olive oil and sprinkle Bebe’s Salt-Free Seasoning over the potatoes.
- Toss the potatoes directly on the sheet until they’re well coated.
3. Set Up the Wire Rack:
- Place a wire rack over the sheet pan with the seasoned potatoes.
- Lightly oil the wire rack to prevent the chicken from sticking.
4. Arrange and Roast:
- Place the marinated chicken pieces on the wire rack above the potatoes.
- Roast in the 425°F oven for 40-45 minutes, or until the chicken reaches an internal temperature of 165°F and the potatoes are crispy and tender.
5. Optional Broil for Extra Crisp:
- For extra crispy chicken skin, broil for an additional 2-3 minutes at the end, keeping a close eye to avoid burning.
6. Serve:
- Let the chicken rest for 5 minutes before serving.
- Gently toss the roasted potatoes in any drippings that collected on the pan for added flavor.
- Serve the Bold & Smoky Blackened Chicken over the Roasted Red Potatoes, and enjoy!
Dibbz Tips:
- Marinate Overnight: For maximum flavor, marinate the chicken overnight.
- Potato Crispiness: To achieve crispier potatoes, place them cut-side down on the baking sheet before adding the wire rack.
