Baby Back Beef Ribs


These tender beef ribs are coated with Uncle Dibbz Texas Steak Rub, cooked low and slow, then finished with barbecue sauce until sticky and caramelized. You can make them in the oven or on the grill.

  1. Preheat your oven to 275°F.
  2. Place the beef ribs bone side down on a wire rack set over a foil lined baking sheet. Pat the ribs dry with paper towels, then rub both sides lightly with olive oil.
  3. Season both sides evenly with Uncle Dibbz Texas Steak Rub, pressing it into the meat so it sticks well.
  4. Pour the apple cider vinegar into the bottom of the baking sheet. Cover the ribs tightly with another layer of foil to seal in the moisture.
  5. Bake for 2 1/2 to 3 hours, or until the ribs are tender and the meat pulls back from the bone.
  6. Remove the top foil and brush the ribs generously with barbecue sauce.
  7. Increase the oven temperature to 400°F and return the ribs to the oven uncovered for 10 to 15 minutes, or until the sauce is sticky and caramelized.
  8. Let the ribs rest for 5 to 10 minutes before slicing and serving.

Grill Method

  1. Preheat your grill to medium heat.
  2. Prep the ribs the same way by patting them dry, rubbing with olive oil, and seasoning both sides with Uncle Dibbz Texas Steak Rub.
  3. Place the ribs on the grill bone side down and cook over medium heat for about 2 to 2 1/2 hours, or until tender.
  4. Flip occasionally and watch the heat closely so the ribs do not burn.
  5. During the last 15 minutes, brush with barbecue sauce and let it cook onto the ribs until glossy and caramelized.
  6. Remove from the grill and let rest for 5 to 10 minutes before slicing and serving.

Tips

  • For the most tender ribs, keep them tightly covered during the low and slow portion of the cook.
  • If you want a deeper bark, add a little more Texas Steak Rub before the final sauce step.
  • Serve with extra barbecue sauce on the side, along with beans, potato salad, or grilled vegetables.
