Preheat the oven to 500°F (260°C). 2. Wrap the scallops: Wrap each scallop with a slice of bacon and secure with a toothpick. Make sure the bacon overlaps slightly to ensure it holds in place. 3. Season the scallops: Brush the scallops with olive oil on all sides, then generously season with Uncle Dibbz King Creole Blend. 4. Sear the scallops: Heat a large, oven-safe skillet over medium-high heat. Once hot, add the scallops and cook for 2-3 minutes per side until the bacon is crisp and the scallops are golden-brown. 5. Add butter and garlic: Lower the heat to medium and add the butter and minced garlic to the skillet. Cook for another 1-2 minutes, spooning the melted butter and garlic over the scallops. 6. Bake: Transfer the skillet to the oven and bake for 5 minutes at 500°F. This will finish cooking the scallops while keeping them tender. 7. Deglaze with white wine: Remove the scallops from the oven, then carefully add the white wine to the skillet. Stir to deglaze the pan and incorporate all the flavors.
